Can I put ice in my wine? Why is rosé pink? Is decanting pretentious nonsense? I’ve answered all those wine questions you dare not to ask in today’s Sunday Times. Everything you ever wanted to know about wine… thetimes.com/article/35e6efb…

One of the joys of wine is that it reflects the place where it is made. Pull the cork on a Barossa Shiraz and you are immediately transported to the parched vineyards of southern Australia. Sip a riesling grown on the steep slopes of the Mosel river and you can almost smell the fresh rainfall on slate. It is this extraordinary kaleidoscope of styles, flavours and geographical locations that makes wine one of the most complex and fascinating drinks there is. But where to begin? I have been sniffing and slurping my way around chilly wine cellars and sun baked vineyards for more than 30 years, tasting thousands of wines along the way. But certain styles stand out. Here are 13 that every drinker should try once. Wines that tell a story, capture the character of a region or simply taste like nothing else on the wine route.  thetimes.com/article/fb3c16e…

Ever seen a koala in the wild?” my guide, Dan Young, shouts over his shoulder as we climb a steep gravel track through eucalyptus trees into the shaded glens of the Adelaide Hills. After the roasting heat of the city it is a relief to get into the country, over the Mount Lofty Ranges, and sniff the crisp, damp air and feel the faintest suggestion of a cool breeze.  We are on bikes. Young owns and runs Bike About Tours (tours from £57pp; bikeabout.com.au), and this wine writer has done little in the way of exercise since he emerged, blinking, into the harsh white light of Adelaide airport five days ago. Fortunately, Young assures me that our first stop is not far off and, even better, we’re riding electric bikes.  “Let it do the work,” he shouts as I push down and the motor kicks in. It’s like freewheeling downhill. Within minutes we’ve climbed the hill and are cutting through the gently rolling meadows on our way to the picturesque Hahndorf, the oldest-surviving German settlement in Australia… thetimes.com/travel/inspirat…

At this time of year, as we gravitate towards heavier dishes, a chilled glass of fino or manzanilla from the sun-scorched vineyards between Cadiz and Seville makes for a pitch-perfect aperitif… thetimes.com/article/dc6d193…
