I’ve been in the Restaurant Industry since high school. I went to culinary school. I have an issue with restaurant owners believing that cutting costs is necessary to make more money. Quality and standards make a restaurant busy. Once the standards slip and it’s about money, it’s over. Restaurants are run in the kitchen more than anyone will admit, and once an owner decides it’s about the money and not about the food, it’s about he/she wanting to maintain status. Truth is, once your clientele finds out you’re using substandard products and still charging for premium products, the damage is done. Not to mention, anyone with half a brain that’s being employed by you and your restaurant already knows the dirty little secret you’re hiding. So do the purveyors who sell the goods to you. If you see a restaurant drastically change their kitchen multiple times in a short period, raise prices multiple times per season, or start getting mailers for specials, you should probably start questioning the business model.

Costco built its own chicken company to protect the $4.99 rotisserie chicken. It's called Lincoln Premium Poultry, it's in Fremont, Nebraska, and it opened in 2019 with its own hatchery, feed mill and processing plant. The plant was built to handle about 2 million chickens a week, around a third of the chicken Costco sells. Local farmers raise the birds under long contracts in barns built for the program. The whole complex cost around $400 million. A company that buys its chickens from someone else has to take whatever price the supplier charges. Owning the operation from the hatchery to the package is how Costco keeps the rotisserie chicken at the same price year after year.

Does the US Team actually take these team events seriously? Do they even practice? Do they have someone who is an actual golf coach instructing them? Is money the only motivation for them to play? I’m sure we could put together a squad of KFT guys that would care more, and take it seriously.

People laughed when I suggested an actual coach for the team events for the US side. It’s not really a question for me anymore, something needs to be done. It’s hard to watch ‘the best guys in the world’ make course management mistakes during match play. Seriously scratching my head.

A can of PAM olive oil spray says 0 calories and 0 grams of fat. The ingredients are extra virgin olive oil, soy lecithin and dimethyl silicone. It's a can of oil. The serving size is a quarter second spray, or 0.25 grams. Under FDA rules anything under 5 calories a serving can say 0, and anything under half a gram of fat can say 0 grams. A quarter gram of olive oil comes in under both. The can says about 665 servings. Nobody sprays for a quarter second. Count how long you hold the button down next time you grease a pan. 2 seconds is 8 servings. There's an asterisk next to the olive oil in the ingredient list. It says adds a trivial amount of fat.

‘The Original Tupperware Container’
There's less than 2% cream in Cool Whip according to the ingredient list. The list says water, corn syrup, high fructose corn syrup, hydrogenated vegetable oil, skim milk, and then the under 2% ingredients, starting with light cream. After that you get sodium caseinate, xanthan and guar gums, modified food starch, polysorbate 60, sorbitan monostearate and sodium polyphosphate. These ingredients are designed to keep the air contained. Whip air into water and oil and it wants to collapse, so you need gums and emulsifiers to hold the foam up. A serving is 2 tablespoons and it weighs 9 grams. 2 tablespoons of water weigh roughly 30 grams so the rest of the spoon is air. We call that overrun, and it's why a serving only has 25 calories.

America’s corporate governance system is broken, and it’s killing public companies. Look no further than Cracker Barrel: Decades of brutal mismanagement have seen one incompetent CEO after another walk away with a massive paycheck while customers and actual shareholders take a beating. Why does this keep happening? Because proxy advisory firms like ISS are corrupt. They blindly rubber-stamp failing boards year after year, protecting the corporate elite while burning shareholder value to the ground. The root of the rot is index funds. There's no question that indexing one's money is a smart financial move for most people. But just because you passively index your investments doesn't mean your corporate votes should be handed over to the managers of your fund so they can play politics. Right now, passive funds hold massive, unchecked voting blocks while having zero skin in the game themselves. It is time for a simple rewrite of the rules: We need to index the votes of index fund investors. Passive index funds should be forced to automatically split their votes to proportionately mirror those of retail and active institutional shareholders — the people actually doing the research, risking their capital, and fighting for performance in the companies they hold shares in. No more rubber-stamping. A change like this will immediately strip corrupt gatekeepers like ISS of their toxic influence. True accountability happens when lazy, overpaid boards actually answer to the stakeholders they represent, rather than screwing them over. Actual, logic-driven governance when your money is passive happens when your vote passively follows the voting decisions of the actual market. We need to stop letting passive capital protect active incompetence. By stripping index funds of their arbitrary voting power and empowering engaged investors, we will finally torch corporate cronyism and usher American capital markets into a golden age of capitalism.

European Feta is different. The texture / mouth feel / flavor does not compare to American ‘feta’. Valbreso is always a go-to.
Athenos is the biggest feta brand in America and it's made from cow's milk. The ingredient list is cultured pasteurized part skim milk, salt, enzymes. Their own website says cow's milk. In Europe, feta has been a protected name since 2002. It has to be at least 70% sheep's milk, the rest goat, and it has to come from certain parts of Greece. Cow's milk feta can't use the name there. The US doesn't recognize that rule. Most feta sold here is cow's milk cheese made in America. Athenos also makes a sheep and goat version. Check the ingredients. Feta made the Greek way says sheep's milk.
