What if a humble potato could offer more than just energy?
Meet Kufri Jamunia, a purple-fleshed potato variety developed by ICAR’s Central Potato Research Institute (ICAR-CPRI) and released in 2024. Its distinctive colour comes from anthocyanins, natural pigments with antioxidant properties and it contains higher levels of Vitamin C, iron and zinc than conventional potatoes, according to the Government of India.
Beyond its striking appearance, Kufri Jamunia combines nutritional value with practical benefits for farmers. It can yield around 32–35 tonnes per hectare under recommended cultivation practices, is suited to the North Indian plains, and can be used in everything from curries and parathas to flour and other food products.
By improving the nutritional value of a familiar staple, Indian agricultural research is exploring new ways to support dietary diversity, strengthen nutritional security and create opportunities for farmers. Sometimes, innovation comes in an unexpected colour.
