In New Mexico I stopped for gas at eleven at night and found a man in boots staring into a glass box of fried burritos like a general studying a map.
The station was called Allsup's.
For sixty miles there had been only dark desert, two-lane asphalt, and the occasional cow. Then, under fluorescent light, stood a pyramid of golden chimichangas and beef and bean burritos stacked inside white paper sleeves.
The man beside me did not look at me. He pointed at the glass and said, "Get the beef and bean. And the Hatch green chile. Do not eat it until you pass the second traffic light or you will burn the roof off your mouth."
I obeyed him.
The cashier handed me two paper sleeves that were already turning translucent from the grease. In my country, chefs train ten years to achieve the correct tempura crust. Allsup's achieves it at a highway intersection next to a rack of motor oil.
I waited until the second traffic light. I took one bite over the steering wheel.
I understand now why the cowboys do not complain about the long drive between towns. They are not driving between towns. They are driving between Allsup's.

New Mexicans decide what New Mexico is called.
Our name represents more than 400 years of history. The Spanish colony of Nuevo México dates to the late 1500s, and Santa Fe was established as its capital in 1610. Today, Santa Fe is the oldest state capital in the United States.
Changing our name isn't supposed to be easy. Our Constitution was designed so that amending it requires more than one person — or one government — deciding they want something different.
To change New Mexico's name, a constitutional amendment would first have to receive the required approval in both chambers of the New Mexico Legislature. Then it would have to go before New Mexico voters. A majority of New Mexicans voting on the amendment would have to approve it.
Our name carries centuries of history, culture and identity. And if anyone wants to change it, New Mexicans get the final say.

My mom has always been tough as nails!! Even through her own battle, she has continued to give, love, and pour into others.
So proud of you, Mom. Your strength inspires us every day. We love you!!💕💕
This story is one that is very special to me. Thank you to @TODAYshow for sharing my mom’s journey. She is, hands down, the most resilient person I know, and I’m grateful for the opportunity to share more about her strength, her breast cancer journey, and what she means to our family. today.com/health/breast-canc…

Anthony Hopkins composed “And the Waltz Goes On” when he was a 26-year-old piano student in 1964 but never released it because feared nobody would like it. 47 years later, his wife, Stella Arroyave, discovered the forgotten music and sent it to Dutch violinist and conductor André Rieu.
Rieu loved the composition so much that he arranged the piece for his Johann Strauss Orchestra.
In 2011, Hopkins sat in an audience in Vienna to hear his forgotten music composition being performed live by Rieu and his orchestra for the very first time. He was visibly moved to tears.
