A ball carrier is doing everything he can to avoid being tackled by 11 guys trying to put him on the ground. Defenders are allowed to hit offensive players in ways offensive players aren’t allowed to hit them in certain areas of the field (i.e., below the knees in the open field). That’s the difference you’re missing.
