While my dad was in the hospital, one of the meals they brought him was meatloaf, mashed potatoes, and green beans.
He could barely eat it.
So I told him...
“Your first meal when you get home is going to be my version.”
He smiled.
Done.
Garden green beans with Fresno peppers, red onions, garlic, fresh applewood-smoked bacon, butter, salt, pepper, and a little Italian white balsamic vinegar to keep everything balanced.
Southern-style whipped mashed potatoes with an absolutely irresponsible amount of Kerrygold butter, sour cream, grass-fed whole milk, salt, pepper…
…and just a touch of bacon grease because I don’t believe in modest potatoes. 🤣
Then the crown jewel...
Elevated meatloaf.
80/20 grass-fed ground beef.
Fresh eggs from the hen house.
Homemade breadcrumbs.
Whole, grass-fed milk.
Yellow onions and petite-diced potatoes squeezed dry through cheesecloth so the loaf keeps its structure.
Worcestershire.
Coarse salt.
Coarse pepper.
Then topped with caramelized onions and a tomato glaze built from nearly half a gallon of whiskey, reduced down hard and finished with a few secrets I’m not giving away. 😂🔥
The result?
Comfort food with some damn dignity.
My Devil Dog pops is on the mend, he’s home, and I get to cook for him again.
That matters more than any plate I’ll ever make.

So were mine. I know their names and where they’re buried.
However…
Their descendant is free. He has an education. He worked a job making people safe. He bought a house. He has a family. He can read and write. He can walk around wherever he wants. He takes care of himself, his family, and his neighborhood.
My ancestors would be proud of me and the country I live in. They would be proud of the progress that was made. They would be proud of the freedoms we all have today.

Let me be clear.
I do not fear Islam.
I despise Islam. I despise Sharia.
Theres a difference. No respect. No fear. Just abhorrence for a culture that would enslave half of humanity.
It should be irradicated. Every Quran burnt. Every mosque torn down. It is despicable. And should be destroyed and remembered in future history as an an aberration of human culture. A lesson taught in how wrongly religious faith can lead people.

Barack Obama just had to pop up and remind everyone that George Washington owned slaves, calling it a “deep flaw” at America’s founding.
We’re tired of the same tired guilt trip. The Founders created the system that ended slavery at the cost of over 600,000 American lives.
