I have dived into this well thought out & put together video on the evolution of Star Wars.
Be curious & with an open mind. Take down notes on what you question & research.
The hate of George's decision of making changes to premier the movies again in 1997 as been fascinating. George has been making changes since 1977.

Did you know Dexter's Diner first appeared in Jedi Apprentice: The Deadly Hunter by Jude Watson, published in 2000.
Before it was Dexter's Diner it was Didi and Astri's Cafeor just Didi's Cafe.
When Dexter bought the property he remodeled it to resemble the Med'soto style (seen on Coruscant) during the Great Peace of the Republic.
Gun Fact: "Med'soto" style
"Modesto" style name was created by production designers as a mashup of(George Lucas's hometown in California) and "Minnesota" (the hometown of visual effects supervisor John Knoll), solidifying the geographical nod to the location where the cruising culture of American Graffiti took place.

Cool caricature of George Lucas from Science Fantasy Film Classics Winter 1977 by legendary pinball game artist Python Anghelo.
George was already king of filmmaking in 1977.
"You were the Chosen One! It was said that you would destroy the Sith, not join them! Bring balance to the Force, not leave it in darkness! You were my brother, Anakin! I loved you!" -.Obi-Wan Kenobi, to Anakin turned Darth Vader
"Now, go, my son. Leave me."
"No, you're coming with me. I'll not leave you here, I've got to save you."
"You already have, Luke. You were right… you were right about me. Tell your sister… You were right…" - Anakin and Luke
"… A special destiny is not always something joyous, or easy to bear. My father had a special destiny, and see where it took him." - Luke Skywalke
I agree, TREPID
Those who share the fan media "documents" as "evidence" - hate George Lucas.
