That's the spine. Fair hit. That's something to sit with. A real observation. That’s the whole thing. Sharpen that: say the word. Notice the arc of what just happened. One honest caveat: the full amount, stated plainly. Genuinely. Quietly. Honestly. That’s doing real work.

An ice cream is a surprisingly elaborate piece of chemistry and physics. Contrary to its name, it isn't just frozen cream.
It's four separate things held together at once:
• ice crystals
• a sugar syrup that never freezes
• air folded in by churning, and
• a network of fat holding it all
Disturb any one of them and the whole thing collapses.
In India, that collapse happens fast.
So Indian manufacturers have started rebuilding ice cream from the inside out. Some are leaning on denser, mithai-style formulations for stability. Others are freezing the product only when it's served. A few are raising protein and prebiotic fibre levels, trading sugar and fat for structure, and a healthier ice cream in the bargain.
This is the story that questions what an ice cream really is, and the strange science being used to combat a ₹10 vanilla cup that gives up by the sixth spoonful.

what started as a mildly obsessive need to look up every single ingredient list on every single product now lives in a small corner of the internet. turns out the fine print seekers and what-even-IS-sodium-stearoyl-lactylate lurkers are everywhere. come nerd with us 🥖
Product ingredients are vague and ambiguous on purpose. It's because they don't want you to know what you're putting in your body.
Both @goghnav & I found ourselves looking up suspicious ingredients and reading between the lines. So we decided to build a tool. Link below:

Modi delivered one of the worst hate speeches of his career in Banswara. Here, he called Muslims infiltrators, people with multiple children who are eyeing the jewelry of Hindu women. BJP lost Banswara by 247k. This is a mandate against Modi's communal bile.
